PC config: Ollama, CLIProxyAPI, Claude thinking levels; drop Omarchy skills

- models.json: local Ollama (ornith-1.5:9b, 24k context) and CLIProxyAPI
  model overrides that copy pi's native Anthropic thinking maps
  (adaptive thinking, xhigh/max) to the proxied Claude models
- pi-cliproxyapi-provider/config.json: CLIProxyAPI on 192.168.2.65:8317
  (API key stays in the git-ignored auth.json)
- Remove the omarchy and diagnose-crash skill symlinks (no Omarchy here)
- Allowlist the new files in .gitignore and document the branch in README
